    never do it through Canada Post, they might deliver on 3rd jan but you may not be within the quota, target to courier within 5000 quota, then slight delays you will fall in 10000 quota

    As per the CIC site policy, PCC should NOT be older than 6 months, since you have submitted with the application, its purely depends on the officer. And you should be ready to get another PCC too, better check the process at your city and the duration to get one.
