I was in similar situation and I sent my wife's document by mail (Canada Post). The only document I sent to prove our marriage was marriage certificate obtained in my country. Also, she has my name in the spouse field on her passport.

You must have PR card when you apply for US visa (). My wife's visa application was put on hold and she was asked to email scanned copy of PR card. She sent it after couple of weeks and then she received B1/B2 visa for 10 years within a week.

I second Joolery. Get a travel document if travelling is a must. You may get it in 2-4 weeks. However, you may get your PR card before that. It seems CIC is processing PR cards faster these days.

Did you get married after filling your CEC application? If Yes, you just let CIC know the change in your marital status and they will send you a list of forms you need to furnish for your wife. I did the same in my case.
