For original documents, there are very fewer chances you need to present, in case you got an interview call then you have to present al doccs If your application got rejected, yes you will get refund except for any State nomination fee

After receiving ITA, if you can provide the separation proof (legal documents) then you can choose status while creating EE.

That'st it now make your wife as Principal applicant, create profile and wait for ITA and meanwhile try to get her experience letters , your proof of funds and if you visited to different countries try to get police clearance certificates from those countries.
