Not sure , I am not an expert, you may check with your company's Lawyer they can guide... anyways just apply for extension right ... hopefully you will get your PR before your work Permit expires

Few people from feb are getting PPR request.. but be patient .. there many people from December and Jan are also awaiting PPR email.. Based on current trend, its taking around 6 months which is as per their commitment. but its case to case .. so just waiting game.

You can attach, but as far I know, they don't consider the any email as a proof. Just attach an LOE stating the same. in any case you will have jobs roles and responsibilities mentioned in experience letter. just address that.

its better you wait for PR, anyways work permit applications are also taking more than 3 months..

You can submit your application with IMM5802 , but its a gamble. It may get accepted for 50 point or may not. Deputation is not considered and letter of employment. Also they need the latest date document. I got the letter issued from my Company. I know few who's IMM5802 was considered for 50...
