Birth Certificate for your wife, YES, yours is not needed. I could be wrong but please double check if you have the latest version/s of the forms or checklist and other country specific requirements.

Thank you for your insight, I'm hoping as well that they would not ask for an updated one, so not to delay further (fingers crossed) I just realized it last night, so I advised my wife right away to get one, just in case.

We are almost 1 year with our Outland Application. I hope someone had an experience regarding Police Clearance Certificate. My wife's PCC validity is only good for 1 year. Will they ask for a new one or just continue processing the application due to the delay with Covid?

Did you try to contact them by phone or web enquiry? You should have received Biometrics Request way before. By now, you should also be getting other updates. You can also check your application in ECAS: On-Line Services (cic.gc.ca) Sometimes it's more updated than in GCKey.

That's too long if you're still waiting for AOR, have you checked with the courier if your application was received? Call or send an inquiry to check, you should have been done or close to done with your application by this time.

Generally your Passport with Visa if you're not from Visa Exempt country. Other documents depend on what type of travel, whether visiting or immigrating.
