You can delay your test, but note that this will add extra weeks or months to your process time.
If there is urgent reason to travel , why not do so, sometimes in life we have to trade one thing for another based on priority.

You have to list all your details starting from when you first came into canada, what you were doing. Note that you will only be credited with one year but you still have to list them all.

Pay-stubs are only needed if you do not have 2 different Notice of assessment from Canada Revenue Agency to proof your 24 months. However,if you notices of assessment covering 24 months, you don't need pay-stubs. No form to fill. Hope this helps
