    So when I applied the processing time was 13 months. Around a year it became 14 months. Two weeks before I hit 14 months it became 15 months... And now 10 days away from 15 months it became 16 months... I feel like I'm never gonna reach the finish line this way..... :(

    It depends if you currently have a valid work permit and if you'll be able to apply for the one with the new employer before it expires. Since you're in the process of renewing, I'm assuming it either already expired or it will soon. If you have enough time you can withdraw and submit a new one...

    I know nothing about Express Entry, but if you get a closed work permit and you get laid off, you will be able to stay in Canada legally and look for another job. Just don't leave the country at that point, because if you don't have the job that goes with the work permit anymore, they may refuse...
