Update from IRCC call as of yesterday was that everything passed but Eligibility under review/Review required (not 100% sure of words used) but now that throws me into mini panic mode

I would really advice you to consult an immigration lawyer before you proceed with this. As much as it isn't illegal to have two jobs, it is not allowed in some industries and applying with one job might seem like you omitted information on purpose. Getting expert advice would help protect you...

Are you 100% sure you claimed points for job offer? I highly doubt this is the issue based on the refusal reason You can confirm on your ITA and if possible can you share your points allocation table on your ITA,no need to show your personal details.
