I don't think they start evaluation until all documents are received, so your bachelor documents are not yet evaluated.

Hi, I started working for a company on 2017/01/01 and my company is splitting on 2019/12/31 which will make it exactly 3 years. (offshore) Can I just use this one to claim 3 years experience and skip the experience from 2020/01/01 onwards for point claim?

Yes, any offshore experience beyond 3 years does not fetch any extra points, but if you mention 4 years of experience, you will have to show proof for 4 years.
