I didn't go out of Canada in last 2 years as my card had expired and I didn't meet the RO. So, I had to stay put for all the time.

I have received the AOR email today (November 05, 2020). The PR renewal application was received on August 18th, 2020.

This works only when I received the AOR email for the renewal, which I have not received it. Mine was submitted on August 14, 2020.

Even the past COPR number do Either you can submit a new application with urgent or try to just wait. For urgent application there is a simple process but the event you want them to do ur I have wait for AOR email. Until then it wont accept any information either from my COPR or UCI.

What do they check at the land POE? Do they don't look at valid PR cards or any other ID?

Saying that you won't be able to get a new PR is totally wrong. You can opt for other routes like getting an investment based PR.
