You should be eligible for EE for sure! And the IELTS score you have is the best to get you the maximum CRS. Good Luck!

If you are confident about your writing then you should go for remark. I have seen people here got 1+ band improvement in writing.. The choice is entirely yours !! Good Luck

Thanks for the clarification. But at Whats time they will ask for such documents? I mean, an LOE should be required to explain it while submitting papers OR Documents will be required to furnish at the time of landing to the immiration officer?

@ivancabrer & @eyts: Thank you so much us for the explanation. I have already requested my Bank to include my wife as a joint account holder, so in that way bank has no issues giving POF letter including my wife name. Additionally, i will put remarks for the same in LOE too..
