    You can have your current designation alone. You can explain using a LOE telling them that it was only a designation change and your roles and responsibilities remain the same under both the designations.

    DOB has to be in sync on all documents IMO. If you cannot get all your documents re-issued , I believe you can submit a notarized affidavit and a letter of explanation. The decision might depend on the VO processing your application!

    It can be changed, yes. If you are resident in another country at the time of your PPR, you can request a change in VO so that you can submit your PP to the VO responsible for the area you are located in.

    Dependent's work experience doesn't count unless it was gained in Canada. Don't mention any of the dependent's work experience in the work history section. Just retain it in the personal history section. This way, you would not have to submit any documentation for it.
