Honestly I don’t if spouse is eligible with work permit extension. All you can do is apply for an open work permit and see what happens. Why not apply for TRV too? IRCC posts processing times.

Your permit expires in less than 6 months so usually IRCC will not process because permit is only as long as your permit.

Sure you can adopt her legally according to that country’s laws. But you cannot sponsor her to bring her to Canada. As mentioned parents are alive and not being able to financially care for them is an adoption of convenience. So you can adopt her and support her within her country.
