When you submitted your spousalsponsorship.....you were employed.....and correct to write "employed".....if you quit your job now, you don't have to inform visa office.
Do you know exactly what changed May 1? Sounds like they are talking about spousalsponsorship approval and not landing documents like a stamp in her passport.
If you apply to extend your visitor status on the basis that you are waiting for your inland spousalsponsorship to be processed they are usually approved

The only implication is if your status has condition on marriage (i.e. spousalsponsorship) you could lose your status for a divorce. Otherwise, you shouldn't have problem
