I am a Indian Citizen and Living in UAE. When I checked the processing time today in UAE it is showing 146 days whereas if I select India then it is 90 days so can I select India and submit my passport to India VFS when I get letter ? is this possible to expedite the time.

Stop posting the same question. You apply from where you are so UAE. You aren’t living or in India so you don’t select India.

It is possible to do this. But ONLY if you have traveled to the US and no other country. Since you have traveled to the UAE, this is not an option for you. You need to apply for a TRV in order to return to Canada. That's the only option unfortunately.
Since there is no Exit stamp in Canada and No entry Stamp in UAE then how someone be able to prove that they had only travelled US ? when someone enters US there is a entry stamp and when some one cross the land boarder in Canada then the only stamp in passport is US only.

The burden is on you to prove you never left the US. Keep in mind that they have access to airline manifest and will be able to find out if you boarded a flight and left the US. You don't want to lie to CBSA. That will create even more problems for you.

You have no choice but to apply for a TRV to re-enter Canada. Entering from the US is not an option.
