Can I apply for TRV and BOWP at the same time? My current work permit is expiring in May 2022 and I am still waiting for CoPR. I need to visit my country in May 2022.
As I only have 4 months, can I apply for TRV and BOWP at the same time?

Which letter?

The AOR/letter where they say you are authorized to continue working with the same conditions (ie: employer and occupation) until DD/MM/YYYY
or until a decision is made on your application, whichever is first.

I don't think so. I know you are eligible for BOWP if you have a pending PR application. That's it.

Also, It's asking couple other documents under optional? Does everyone gets the same list?

No. you are doing something wrong. Search on youtube for "step by step process to apply for BOWP" and follow those.

This is common with everyone. They send this letter to everyone who applies for BOWP. I applied on 11th sep and I too received the same letter.
You can continue to work even if your application isn't processed in 120 days.
&
There is no certainty that your application will be processed under 120 days. (But, I secretly hope it gets processed asap).

Like others have already mentioned, you are doing something wrong as there should not be any such document in the list.
For example, here is how the regular list of docs looks for the BOWP application on the IRCC Portal:
