If we started as fsw-o and move to canada due to work. do we become fsw-i ?

Yes and it makes absolutely no difference in any stage of your EE app since you have most/all your info (bank, education, work etc) outside of Canada. IRCC knows no distinction between FSW-O and FSW-I. There's no legal distinction between them.

No I meant to ask that if I started as FSW-O. Got ITA and I am in AOR. I then move to Canada due to work, will I become FSW-I automatically?
Will I be processed quicker than FSW-O applications then?

As I already answered:

IRCC knows no distinction between FSW-O and FSW-I. There's no legal distinction between them.

So no your application won't be processed faster. The processing speed of your application won't change.
