Canada has been pretty flexible about granting extensions due to COPR. You will likely be asked to contact IRCC when you are ready to travel. Yes there will be some delays if you add a spouse but then you'll be able to travel to Canada together versus being separated for a year if you have to sponsor your spouse from Canada.
With delays in actually landing in Canada and then coming to Canada without your spouse, and then applying for and waiting at least a year for spousal sponsorship, why would you delay your wedding.
I was planning to leave for Canada and get back to India after receiving PR for the wedding. We thought he could visit me using tourist visa before spouse visa approval. I am not sure if that works now
If you have PR, then a visitor visa for your spouse is more difficult because officer know your spouse is not visiting.
