Get a doctors note that these medications are necessary for your survival and due to Covid, you are unsure when you are going to fine a physician/endocrinologist to write you a prescription. You will also have to carry it in a medical bag with ice so that they don't go bad (insulin). You can also ask onboard flight attendants to put it in the refrigerator on flight.

There's always a possibility you could be fined as well. You may also end up being flagged in CBSA's systems which means that you can expect to go through secondary inspection each time you enter Canada in the future.May be or may not be..

You should only carry 90 days supply. Planned to find a doctor and pay for the visit and the medication in Canada. That should be part of your plan if you are to study out of your home country. Contact your university/collage to see if they can help you to find a doctor who will accept payment.There's always a possibility you could be fined as well. I'm not sure what's confusing to you here. Either you're prepared to break the law and deal with the potential consequences (confiscation, fines, flag in the system). Or you should follow the law and only bring a 90 day supply.
My opinion is that it is a really bad idea to break the law if you are coming to Canada on a study permit.
