Still awaiting Visitor extension, can I begin my PR?

So 2020 happened to me.

I will explain my situation: I am a British Citizen and have lived and worked in Canada for 3 years under a working holiday visa. I met my wife [Who is a Canadian citizen] while working here. My working Visa expired in 2018 and I have been living as a visitor in Canada since, with the exception of returning to Scotland in 2019 for 6 months.

[I returned to Canada on Jan 18 2020, with the intention to marry my Common-Law-Partner in March and begin my PR Sponsorship before my status as a visitor expired in July...long before. But of course lockdown, rescheduling, uncertainty pushed this back]

In June I applied for a visitor extension (Of 6 months) before my current status expired in July 18th. This is still at present processing. 6 months after it was received!

[I have now married my partner in November, as after so many cancelations we felt it was best to get it out the way despite not meeting our original plans]

I currently have no proof of legal status in Canada, so I cannot provide the paper work for my sponsorship forms. I'm also concerned that I will not receive my visitor visa extension before Jan 18th which is when that visa 'should' expire.

I understand that while something is processing I can stay but it seems redundant if i know that what is processing would have already expired unless the 6 months is started at a different date.

I'm also concerned about traveling if I have to leave under the current world wide covid situations.

Any advice on any of these issues would be greatly appreciated.

I got the email 2 days ago that it has been approved. However I fear it will be expired by the time the actual visa arrives by mail. Less they anticipated that and started my extension from a later date.

Does this email contain the end date of the extension? Does it contain visitor record number? I believe that these are the things that are necessary to file a new extension application.

5. Approval E-mail date: ?
6. Approved End of extension of stay date: April 30, right?

I am trying to make sense of it all and apply to our own situation. We arrived on February 1st and applied for extension of stay till January 31, 2021. Application was received on June 30, 2020 and until now the status is:
