Hello, I'm currently working full time with a job offer, but i don't have a LMIA, should i answer "Yes" to the question about job offer and then just answer "No" to the LMIA?? Also, in the question "Has XXX been working full-time for the employer on their current work permit for at least one year? should i put yes or no? I have been working for more than a year, however my work permit is an open work permit so that i don't have any employer listed on it.

Correct - you should answer no. What you have doesn't count as a job offer under Express Entry.
