I am talking to an employer about working in Toronto, in my field. They have said they would be willing to hire me as a remote contractor until I get into the country, and then offer me a full time position. Is this situation something that would benefit me? Would I be allowed a temporary visa in this case?

Any work done outside of Canada will be counted as foreign work experience. So from that perspective you won't get any benefit. In order to qualify for a temporary work permit or to count this as a job offer for extra point for Express Entry, your employer would need to obtain an approved LMIA.
