Is 6+ months of say enough or we need multi year stay to show tax returns etc?
I am wondering if I move there next year and establish myself for 5-6 months, would that be enough to show the income as paystubs/employment letter etc or would they look for 2020 tax return as well as I may not have that.
Generally they look at your past year NOA. Supervisa approval is based on earnings in Canada in the past year before employment and not your salary. The fact that you were living and working in the US is likely to be a problem if you apply for a supervisa soon after moving to Canada but nobody can say for sure. You seem to be having your father move to Canada which neither of these visas allow him to do. His health insurance through a supervisa is just emergency health insurance. Once stabilized parents are required to return home or pay for any further treatment if available since those entitled to healthcare will always be prioritized. You can apply for extensions of all these visas but at a certain point they will stop being extended. To apply for a supervisa he should be in India because he must show his strong ties to his home country to be approved.

I agree to your point. So, as I was in Canada last year and I have earnings in Canada in the past year. Then, can I apply supervisa from USA?

Seems like the other option would be that I move to Canada now (company transfer) and have my father wait in India while we apply for Super visa. How long its taking for supervise from India now days?
