No need for a notarized. You will need to keep the money in the bank for 6 months in order for it not to raise suspicions that it is not your money. There is not tourism at the moment so you have time.

If she has internet banking, she can download her bank statement from her native country as proof of funds.
She need something from her side. Ask her bank to send her a signed letter showing how she has in her account or get the bank statement mailed to you from the native country.
