If someone apply for a visitor visa extension now (from inside canada), and due to COVID (or whatever reason), IRCC takes more than 6+ months to process the application. How long would the implied status be valid?

Would it be fine to make another extension application just before 6 months (even though the result of previous extension application is pending).
 
Implied status is literally until the decision is made. That’s what “implied” implies.

No, don't submit a duplicate app when the previous one is still in process. IRCC specifically says not to do this.

If the application which requested extension for 6-months (till October 2020) is approved in 7th month (Nov 2020), wouldn't the applicant go out of status immediately on application approval (as the implied status would end)?
or would the officer approve the application for little longer than requested (6 months)?

IRCC won't backdate an expiry. It will either be refused or be valid for a future date after the approval.
