I am a New Zealand citizen about to study an MBA in the US on an F-1 student visa -- am I able to get PR on Express Entry and return the US to finish my study before moving to Canada permanently after graduation?

Yes. You'll need to re-enter Canada and then stay a minimum of 2 years (non-consecutively) by the time your 5th anniversary (from when you became a PR).

So you could be gone for 3 years and then come back for 2 years straight without been able to leave for a single day. This is just the most extreme case for illustration.
