So I applied under Marketing NOC 1123! However, under personal history, I declared that I am currently working for a publishing house based in Switzerland, namely MDPI. I have since quit that gig as it was not paying enough. Would Immigration Officer think this is suspicious or they wouldn't care what I do after I meet the one year paid work requirement under appropriate NOC. Please advise!

As long as you can prove the work experience, I don't see it being an issue.
