Applying to extend IEC when I only was given a 1 year visa

Hi there.
Looking for some advice as I am very stuck at the moment.
I entered Canada in June 2019 on a IEC working holiday visa from Ireland with only 3 months insurance as that's what eveyrbody I know told me to do if you aren't sure whether you want to stay for two years or not and that it's never checked. Obviously that wasn't the best idea and I was extremely unlucky and had my insurance checked (all 7 of my friends had 3 months insurance and got the 2 year visa). The officer gave me a on year visa and wouldn't give me a 2 year one because I didn't have twp years insurance but I didn't even have one years insurance so that didn't make sense. I have updated my insurance until the date that my visa should have expired in 2021 and am thinking of attempting to apply for the extension as people have said it could be possible to get given my second year. I really need my second year so that I can work towards PR or move in with my boyfriend so we can apply for common-law next year. Just was looking for advice from anyone or if anyone had been through the same thing? I also was wondering if including a letter from my job or any other references in my application would help at all? I also then know I would be working on implied status while I wait to here back and just wanted to check if that would be an issue?

Unfortunately an extension will not be possible. One of the specific circumstances in which extensions are not granted is if you had insufficient insurance when you entered Canada. See the following link and select the "expiry date on my work permit is wrong" option.

If you apply for an extension, it will be refused and you'll end up in Canada without status. Also, any work experience you gained after the expiry of your original IEC will be classified as working without authorization and you won't be able to count it towards PR.
