I'll be taking some money from my family to meet the POF requirement.

How do I get a gift deed made? I came across an earlier post with the format, do I just get that format on a stamp paper and get it notarised by the same notary you go to for getting affidavits made? Or is there a different person to drafts gift deeds?

Affidavit = gift deed. One document on stamp paper, officially notarised and signed by your family member is all you need.

On any value stamp paper, just type out the essence:

I, father of Armchairviking, do hereby gift my son the sum of INR XXXXX (CAD YYYYY), out of love and affection, to use as per his wishes. I relinquish all claims over the amount and do not seek a reimbursement of the same."

Signed by Notary's sign and seal, dated.
