I need help with a concerning issue. My post graduation work permit expires on 2 dec 2019. I am making a paper application and have filled the form and made the payment already. I have couriered the papers and upon tracking it says that the application will be delivered next day on 3 dec 2019. Although I know that the application will be rejected but my question is will it cause any trouble in my future applications for permanent residency as I applied on the day of expiry and the documents being delivered after the expiry date. Can anyone please help me

They will likely go by the receipt date, which would put you out of status. Even if they go by the mailing date, as you don't qualify for an extension, expect it to be rejected as incomplete, which renders all work done AFTER Dec 2 illegal. Yes, this can cause you problems in the future.
Forgo the illegitimate work permit extension app and apply online ASAP to change your status to visitor. You need to do this before midnight EST.
Basically what I did is I made the payment and validated the application form on 1 dec, and couriered it today morning (2nd dec) so that it gets delivered on 3 dec at 10 am. And Upon calling CiC and asking them about it, they said that they consider mailing date of the application and not the delivery date. I know it will be rejected but it is the only way I could buy some time while I wait for my invitation of permanent residency. So I am kind of worried now based on your reply. What possible problems I might have if you could tell me?
It is not "buying time". It is trying to game the system. As I said, your only legitimate option is to apply to change your status to visitor ASAP while you still have status.
Illegal work can lead to removal from Canada.
