i would imagine so if they are canadian GIC...? In the past my friends bought canadian GICs as proof of funds to come to canada as intl student...

That is what the ITA document itself seems to imply, that age points are effectively locked at time of ITA and not AOR.
Though there is a lot of confusion online regarding this point ..
I see you have already asked for PCC and have employment letters already. may I ask what is your country of citizenship? some countries dont provide PCC unless official letter is provided

They will be able to clear their targets. The CRS depends on the people already in the pool and people who join the pool between the draws, if 500 people join the pool with high CRS just a day before the draw, the cut-off automatically increases.
We had a maintenance notice last week, and drawing did not happen.
We are all trying to just make sense of things that keep happening. Sometimes, things are just random.
With complex and scalable systems like the one IRCC has, periodic maintenance is not uncommon.
