You should be truthful and honest. You need to state what the exact situation is, and why you will return back. You cannot "improve" facts.

Currently I want to do masters in canada and later to be honest, I dont want to stay there,Instead I would like to return india and look for jobs in design and process field or else I would like to enter into teaching field in an engineering college. Now a days indian engineering college mangement gives large value to foreingn degrees.

Also can i mention the present occupation as like this " ex-NRI (Civil Engineer)" for my father.

Mention what you want to do. They are only bothered that you will go back after your studies. You can mention that your parents/father is retired. NRI is a tax status not a status of someone's class.

My agency told me to submit only the tution payment proof and GIC proof.
And told canada sds visa doesnt require itr and other stuffs like that.
My university have a tution for program completion in 2 yeara (Around 19,912 CAD) and I paid the whole and GIC of 10002 CAD.
Is that really enough

For SDS 1 year's tuition, GIC of 10000 is required. Along with IELTS of overall 6.0, with no module under 6.0. As your agent said ITR etc is not required. SOP is not required, but recommended.

My university does not have an exact fee for first year, because the fee is calculated per course.
So I payed the entire fee for program completion as mentioned in the department page and academic calander.
So In that case, Iam i eligible for sds

You should be, you will just need to attach the receipt.
