Hi,

I'd like to sponor ONLY my Mother (not my father).

I'm single and currently reside in Quebec.

When calculate the family unit, there is a note "In addition to the principal sponsored person, you must count all his or her family members whether or not they accompany him or her to Quebec. "

Then what is the total number of sponsored persons? one or two?

You don't have a choice. If your parents are married you have to sponsor your father. If they have dependents under 22 they also need to be counted. If your parents are married with no dependents and you are unmarried with no dependents the number is 3.
