Did you talk to a person at the VFS who you have your application to? You have the receipt right? Where are they saying your application is? Forget about online tracking.
Are you calling VFS and not the visa office directly? These guys https://www.vfsglobal.ca/canada/india/ ? Very strange if they are not picking up, keep trying or go there in person, talk to the person you have your passport.
