Wrong approach. If you feel you can't submit within time then better to decline ITA before it gets expired. That ways you will not have to create EE profile again and will be in pool immediately.

Letting your ITA expire will mean that your EE profile will become invalid, why you want to create a new EE profile?
Is it not better that if you feel you cannot meet the deadline, you decline the ITA couple of days before it expires and get back in pool with same EE profile?
Other than the hassle of creating another profile, it makes no difference for 500+ points assuming a round of invitations does not take place your 60th day. You can decline it on the very last day (60th day). Why do you want to let it expire?
