now,some pre requisites
there are two types of ppl allowed to apply..ppl in skilled trades and ppl in other areas of work FST & FSW...u need to understand in which category you fall into...and see if ur trade falls into the list of approved occupations (NOC list)
1. Need to have completed IELTS with CLB 7 , that is score 6 in all four sections of the IELTS exam
2. Need to have minimum 1 year continuous permanent paid experience in ur field of work (which is on the NOC list)

you get points for Age - max 100/ education (PhD getting highest points 140 ,Masters 126 , Bachelor's 119 etc) /language skills (higher the IELTS score higher the CRS score u get max 136 ) ,for work experience max 50 points / additional points allocated as adaptability factor ie if you score high in either English or French,you get extra points for education & experience )

if you are eligible as per the first link,you can get your education assessment done by any of the credentials evaluation agencies (WES etc) and create an Express Entry profile in CIC website ...and you'll be invited to apply if ur score is equal or higher than the cut off they declare at any subsequent draw after u create ur profile...

if you haven't done IELTS already,I suggest you go through first two links giving a fictional score (that you feel you'd be able to secure ) for IELTS and complete the eligibility assessment...if you are eligible,then go ahead and complete IELTS as early as possible and be a part of the pool...you may try checking the score multiple times in the CRS calculator by increasing ur IELTS score...

In your case I'm not sure because as the requirement, same as you said, you should be working full time in a Job under NOC 0, A, B.
I also applied SOWP for my wife which was granted before but I was working under NOC A category. I have submitted supporting documents for my wife when she applied for it that is related to my work proving it was NOC A Full-time(30hrs+ per week). Besides that, documents to prove you have enough financial support during the "temporary stay" in Canada and that strong ties the individual will return after stay. A dual intent letter with explanation that should the PR application are approved, you guys will stay.
