Home country work experience query

Hello to everybody. I have a question regarding work experience.
I have 2 years of experience back in my home country and 1.5 years here in Canada.
1)In the question "how many years of work experience do you have in the past 10 years?" It would be correct to put 3 or more or it is only about non-canadian work experience?
2)I only would be able to get a work experience letter from my old employer back in my home country. I don't have any payslips o anything. This is enough to prove it?
3) I have worked for 2 companies here in cabada. I have the letter of work experience from the one that I'm currently working.
And aldough I have the letter from my first job it's not good because it doesn't said the noc code, it only have some of the my job duties and it doesn't said my full name. It took me around 3 month to get it. I will leave Canada I about 1 month so I don't know if I'm going to be able to get another one from them. My question is if it would be better not to upload this one and use a LOE to explain the situation and do a self declaration or upload this with a LOE explaining everything and including a self declaration.

1 - Foreign experience only.
2 - Technically a reference letter following IRCC's guidelines is the only mandatory document but your VO is more than free to ask for further documentation. That is, nobody can say whether the ref letter will be sufficient.
3 - Who told you the reference letter must state the NOC code? - google "express entry intake" to see the requirements of a reference letter. A self-declaration is not recommended unless you are truly desperate.

First of all thank you for your quick response!
You are right it's not necessary the noc code. But the letter it doesn't have my full name on it just the middle name so it's not good. And it only have 3 main duties listed.

I have 2 more cuestions
1) it's necessary to have the annual salary on the letter? Because both that I have only state the hourly rate.
2) this one is about the police certificate. I have one that I use to come to Canada in the first place. But I come here after 3/4 months of obtaining my permit. So I was in my home country for about 5 months since I obtained the certificate. Can I use that one or I need a new one?
