after entering EE pool, from what I know I should submit work experience letter including:

company letterhead
title
start date
main duties
working conditions
hours completed
education
skills required

will they still contact my manager after I submit this? if so, what kind of questions would they ask my manager?

It is at the discretion of IRCC if they want to contact your manager, they don't always do though.
