Is reference letter from the employer is sufficient or we need to submit additional documents?

It is the only mandatory document to prove your work experience. Whether it is sufficient or not depends on the processing officer. Up to you if you wish to add any supporting documents.

Also make sure all the info requested by IRCC are clearly state in the reference letter. that should normally be enough.
