Hello! I was born and raised in the US but my mother was born in Canada. I recently found out about, applied for, and was granted Proof of Citizenship based on the Canadian Citizenship Act of 2009/2015. The certificate indicates that I have been a citizen since my birthdate 30 years ago.

I’m wondering, if/when I have children of my own, would they be entitled to Canadian citizenship as well, even if born in the US? My wife only holds US citizenship.

There are experts on here that would know better, but I'd say probably not since you were born outside of Canada.

That was my assumption as well, but after running through the tool it spit out "Based on the answers you gave us, your case is too complex for this tool to assess." I guess when I do end up having kids worst case scenario I'm just out $75 CAD if I submit the form and they get denied.

Semi-related question, as a citizen now would I potentially have access to healthcare through one of the provincial healthcare systems, or is there a way to buy into one of them while living in the US?

As far as I know, Ontario's healthcare requires residence. There is some coverage available while travelling for emergency care, I believe, but I'm not aware of any way to have access to the system without living here. Not sure about other provinces, but I'd suspect similar guidelines.

The 2009 citizenship act limits citizenship by descent to the first generation that are born outside of Canada (i.e.: born abroad) on or after April 17, 2009; since you implied that you do not have any children now, any children you have later on not born in Canada will be considered second generation born abroad and are not entitled to Canadian citizenship by descent.
