Im curious about this as well. Govt workers usually get a decent amount of vacation days and christmas is a good time to do it. However given the increased priority the govt has put on immigration and the need to address backlogs they should have a presense there outside of xmas and boxing day.
There's no reason to believe processing times will be affected by the holidays. Stat holidays will of course be recognized but it's not like the offices shut down for an extended period time over Christmas. If anything I would hazard a guess given pressure to complete applications they will be working just as hard as any other week.
