In the form work education section : it says if you are unemployment please indicate the date :

Example I left the job 15 May 2017 and I got new job June 19 2017

But in the form it is asking only mm-year

So how would I write there the date

Also how much period if I don't work called unemployed ( 1 week 1 month or what )

Please explain to me thanks

You are unemployed if you are not working. Does not matter whether it is one week or 1 month AFAIK.
Just put 05-2017 to 06-2017. If they need more information they will ask for it. Or you can attach a letter explaining the dates if you want to.
If you were travelling, you could put Travel/Vacation/Unemployed at the title.

I think upto one month without job is not unemployment

Because if you change Job it may will take minimum one month nth to find other job

But you cannot claim to be employed during this time. You need to either say you are employed or "Not working", "looking for a job".
CIC just needs you to account for the time. I do not think they care as much as to whether you were employed or not. They need to verify residency and if you have proof of what you are claiming, it doesnt matter.
