It's not mandatory to submit education docs for spouse. But, you won't get points in CRS if you don't submit her ECA and other supporting docs.
The same applies for work experience also. In fact, work experience of spouse doesn't give you any points. So, just mention her work and education details in her 'Personal history' section in your application.

I have applied under the FSW Program. I am the primary applicant but as I stated in the EE profile that my husband is employed, do I have to state the same in my Post ITA application. If I do, it asks me to upload an experience letter for him which he is unable to get from his organization as they donot give a letter stating the job description.
Is it okay to add the work history for spouse in the express entry profile in the work history column but when i get an ITA put work history in the personal history column during eAPR but not the work history?or just give a letter from HR stating that he is employed without his JD.
