My PGWP is about to expire and I'm looking to apply for a restoration of status. I was wondering if anyone has done this before and what the process is like?

When does your PGWP expires? And on what basis, do you think that your restoration/work permit extension will be approved? Please provide details in order for others to comment on.

My PGWP expires in October so I plan to send in my application two or three days after it expires. Technically, It was given to me 8 months earlier than it should have been as I graduated in may 2015. I was wondering if this could be enough grounds for which they could extend it for another 7 or 8 months.

So you got your PGWP before you even graduated? How is that even possible?

Man, that's such a COMPLICATED story. To make it short, I finished my courses in July 2014, but in order to Stay in Canada until my graduation day in May 2015, the only thing that could extend my stay was a PGWP so I applied and got approved for it. Now that brings me to my current situation and question in my original post

Okay so how long did you study for? I'm assuming it was 2 years? So you got 2 years on your PGWP? Because if you studied for 2 years, you will get 2 years or 3 years work permit but that depends on the officer. And I'm afraid you cannot extend your work permit based on the reasons that you graduated in 2015.

All PGWP can be applied from the day you finished your program. So when you got the letter of completion from your school, it should list the date you finished your classes. Doesn't mean you have to wait until you graduate in order to apply for PGWP.

If you have 5-6 months left on your PGWP, it is hardly "about to expire". It is much smarter to maintain your status than it is to let it expire and apply for Restoration. Unless you qualify for a work permit through other circumstances, you would need to change your status to visitor.

I studied for four years. I'm curious to know what could make them extend a work permit.
PGWPs are not extendable.

I already have a job here but I've only been working for 3 months here, it's not enough to get me into the EE pool or an LMIA from my employer. Does Visitor status let me continue to work here? And I believe its only supposed to last as long as your work permit

No, visitor status most definitely does not allow you to work here. From the info provided, you don't qualify for any other work permit.

So Go home is the only option I have after 8 years of living here?
From the information you've provided, it seems that may be your only option. You don't qualify for PR or another work permit. You could apply for a study permit if you get admission to a college/university, though you won't qualify for another PGWP. You can change your status to visitor, though it won't allow you to work or study.

You should consider going home and working to gain skilled experience in order to qualify for PR.

Also as per OPs other post asking for a random cheap Masters course in Toronto as I am sure the OP should know having been in the system for such a long time that applying for a new study permit cannot simply be backed up with some random course as the application has to be related to everything else.

A separate issue when I try to view the OPs masters post I just get a blank page so do not know whether is me or a fault with this new website format , happens on a few other random posts/threads as well where I can view if not logged in but as soon as I log in I get a blank page.
