Proof of employment for a company that has shut down

Has anyone here successfully gotten their (FSW) PR from EE when their previous employer has shut down? I've done tons of research into this but have never found a clear answer on what people have actually submitted. I have most of my pay stubs, I can get my old manager to write a proof of employment but I can't get it on a company letterhead. Is it ok to not have any company letterhead? Is 1 enough or should I get another one from the former HR person?

An article about the shut down was published in a very well known US newspaper, I also have a screenshot of the company wide email about it, would these be enough as proof?
