I have full-time paid work experience (1 year) in my home country while being a full-time masters student (I had weekend classes) on a student visa in a foreign country (not Canada). Will the work experience count towards fulfillment for Express Entry (FSW) in Canada?

Depends upon Canadian education standards. Did you completion certificate mentions full time? Did you job experience letter says full time as well? Have you yet applied for ECA?

My degree certificate mentions full time study. I have offer letter from my current employer stating full time work.
I didn't apply for ECA.
My question is, will this work experience count towards FSW requirement in the Express Entry program?

No matter what you apply for, you have to get ECA. Apply for it and see how it goes. It might work. As you know there are different rules. Take for instance Canada, in case of full time you are allowed to work like 30-40 hours or in a nutshell a student can't work full time. So it depends upon them how they perceive your status. But I may be wrong.

Yes, I am aware that ECA should be done to verify degree certificate, planning on doing it through WES. I am wondering, once I get the ECA assessment, would Canadian immigration think about this: a full-time Master's student in a foreign country and a full-time employee in home country.
Please note that I had classes 2 days a week which were happening online, I didn't have to be in that foreign country during my studies. Also, I couldn't find jobs there, so I applied and got the job in my home country.

Will Canada verify legal implications and rules of other countries during Canadian immigration process?

Yes it counts
So will Canadian Immigration raise eyebrows and ask why I was a full time employee in my home country when I was a full time student in a foreign country?
I mean, I do have the necessary documents about the job (payslips, offer letter, Bank statement etc.) and a valid reason as to why I chose to return to my home country to find work.
Please let me know.

Yes, you can claim full-time experience along with the full-time education outside Canada as long as it's genuinely obtained and supported with well-organised documents.
