I got my official letter of completion and the official transcript from the university and applied for the Post Graduate Work Permit yesterday. I have a part-time job and my employer has offered me a full-time job. Can I work full-time? based on IRCC I can but don't I need a piece of document for proof?

Just keep the application receipt as proof that you've applied for PGWP, employers can see that and look online if they asked for a WP.
