Could someone please help me. I'm applying for express entry and I have all of the required documents except for the work experience. I have been working part- time for the past year but I also have full time experience for about 8 years prior to that. However because I used to get paid in cash I have no way of proving this, What do I do about this? Any help would be highly appreciated.

You need to have experience letter for your full time (at least for 1 year) to claim minimum points.
If you dont have an experience letter, include your offer letter, notification on your job roles, details, salary etc from a colleague and need to notarise that.
In any forms, you need to have a document which proves your work experience, roles, salary, full time or part time and a contact reference to a colleague or HR.

Thank you for getting back to me. So if I get a letter from my last employer stating that I used to work for them for several years, that will be enough?

"
a reference or experience letter from the employer, which
  • should be an official document printed on company letterhead (must include the applicant’s name, the company’s contact information [address, telephone number and email address], and the name, title and signature of the immediate supervisor or personnel officer at the company),
  • should indicate all positions held while employed at the company and must include the following details: job title, duties and responsibilities, job status (if current job), dates worked for the company, number of work hours per week and annual salary plus benefits"

If you have that information it might be enough.
