After my PG Diploma Certificate Course (of 1 year) is completed, Can I get an extension on my 1 year work permit visa if its due and I am in EE pool ?

No -being in the EE pool does not allow you to extend your work permit.

Your employer would need to get an approved LMIA. Or you would already need to be selected under Express Entry (already received ITA) and submitted your complete application - in which case you would qualify for a bridging open work permit.
