work Experience proof 2005 2006 a problem

Hi I was working abroad in those 2 years in Gran canaria. It was cash in hand but I was registered as self employed. I have no proof of this and find it difficult to get proof. Can I just leave those two years blank and say it was a career break or something. or explain situation in application. Advice would be helpful before I submit EE.

My suggestion would be to include the detailed explanation for those two years for :

No1. to avoid any misrepresentation of fact to CIC
No2. Why deduct your real work experience ? Is'nt there a single document like offer letter, experience letter or anything? Was it that you received cash in hand and deposited it to bank account? If so you can submit extract of that bank account to prove that there was regular inflow of cash/earning.
Then leave it to CIC to consider/reject that 2 years as your work experience.

I'm afraid I have no evidence at all. GC is more of a holiday location and all jobs are casual no contracts etc.
I have nothing left no evidence of bank account or payments made. After leaving I destroyed everything not thinking I would never need it again.
I have friends I worked with that could write a letter to state that we paid our own taxes And that I did work there.
I'm just worried they will look on it badly And just to leave it Out.
